Bento Cuke Pita

Cucumber pita is one of my most favorite, light lunches. Spread cream chees on the inside of the pita, sprinkle a bit of Spike or your favorite spices inside. Place a few cucmber slices inside and stuff with sprouts of your liking. I favor alfalfa and radish.

My lunch is rounded out with slices of plum, pitachips, and homemade fudge.

My first time making fudge was successful, easy, and delicious. Thanks to this Fudge Recipe

2 oz. unsweetened baker’s chocolate
16 oz bag semisweet chocolate chips
2 T unsalted butter
16oz. sweetened condensed milk
1t. vanilla extract

In a double boiler melt butter and baker’s chocolate stirring occasionally.

Add 1/2 chocolate chips and continue to stir. After melted add remaining chips and fully melt.

Carefully add condensed milk and blend

Remove from heat and stir in vanilla extract.

Pour into pan and refrigerate or freeze until fudge sets.

One More Bento Box

I have a thing for lunch boxes, especially bento boxes. I love the shapes, colors, the stacking, the organizing. However, I hate making my lunch? Makes no sense but I love to buy cute lunch boxes and then they sit empty on my counter and I drive to Panera for another Napa Chicken Sandwich and mac and cheese.

This is my latest purchase and I am hoping to be inspired to plan ahead and make myself a lunch or two. A few weeks ago I came across a great bento book for making easy lunches. I should confess that I am also in the habit of buying cookbooks, reading them before I go to bed, but never making one recipe. This is another example but the book is great. Beating the Lunch Box Blues by J.M. Hirsch

A Race to Turn Red 🍅

I pared down the garden this year and planted 3 Roma Tomatoes, 1 basil, and 1 jalapeño plant. Everything went in a few weeks late because of the cold. By the end of July I picked 4 good sized jalapeños. I gave mommy the entire basil plant. She makes great pesto and will send some my way. She had no luck this year with basil. We think too much rain on Krause Mount.
Tomatoes ? I have many beautiful large green Romas. JJ found 1 red one but that’s it. I am going to experiment with a paper bag 2 in the bag and 2 on the counter. It’s a race to turn red.
